Soy Pancakes
Ingredients:1 cup Soy Flour2 3/4 cups all-purpose flour3 tablespoons baking powder3 tablespoons sugar1 1/2 teaspoons salt3 eggs3 cups milk6 tablespoons salad oil

Directions:Mix all ingredients together until moistened. Add extra milk for thinner pancakes. Spray griddle with a non-stick cooking spray. Preheat to 350 degrees. Pour 1/2 cup of batter on griddle for each pancake.

Yield: 30 servings.Per serving: 212.3 calories, 9.5 grams fat, 39.8 calories from fat, 40 mg cholesterol, 469 sodium
